If you follow chef/owner John Brandt-Lee of West Chester’s Avalon on Facebook, you have noticed that he recently announced that he signed the lease on a second restaurant. While the chef has teased the local food scene of where the location will actually be, there is confirmation that he is taking over the former Jasper at 78 W. Lancaster Ave. for a pasta-focused BYO called “Avalon’s The Pasta Bistro.” (His hints included, “A former restaurant space that we will renovate on a main drag.”)
The chef, arms’ deep in modernizing the classically-styled, previously popular space to one trotting an energetic, upbeat vibe, reveals that the new Avalon will concentrate on homemade pastas like a pappardelle with poached sea scallops and black truffles in a lobster brandy cream; flatbreads, salads, an impressive selection of artisan cheeses, and a 15-plus antipasto platter barreling with items like roasted peppers, white anchovies, chili-cured olives, eggplant, zucchini, fried risotto, preserved tuna, roasted beets, white beans, and more.
Also, as Michael Klein scribed in his breaking story yesterday over at the Inquirer, the pasta bistro will host a specialty four-course, $40 prix-fixe, including an antipasto platter for sharing, two pasta courses, and dessert.
