At Sunday’s Chester County Restaurant Festival, owner/Chef Jon Amann of Amani’s BYOB of Downingtown nabbed the Best Chester County Chef crown when competing in a vigorous three round culinary competition against three other notable local chefs.
Swimming through a close-call cook-off, chefs of Silverspoon Cafe, Side Bar, Blue Pear at the Dilworthtown Inn and Amann battled through an appetizer course using beets, an entree course using pumpkin butter and a delectable dessert closer with goat cheese—all of which kept spectators on their toes while judges’ tastebuds were continuously in pure heaven.
While all of the chefs with undeniably above-par, spouting incredible talents, Amann’s award-winning dishes assisted him in nabbing the overall win. The raved roundup included the following:
Course One: Fried Wontons stuffed with Pan Seared Foie Gras, Chanterelle Mushrooms, and Blue Foot Mushrooms served with a Porcini and Truffle Sea Salt dusted Diver Scallop and finished with a Beet Puree
Course Two: Seared Halibut with a Pumpkin Butter and Hazelnut Crust, finished with a Whiskey Molasses Glaze and served with Pommes Frites tossed in Smoked Sea Salt and Honey Thyme Scented Root Vegetables
Course Three: Champagne Mangos, Gooseberries, and Strawberries tossed in Fleur de Sol and served with a Goat Cheese and Lemon Verbena Whipped Cream between layers of Cinnamon Sugar Phyllo Dough
In perfect harmony with his victorious win, Jon and his wife, Jeanine, announce that starting today they will begin serving their seasonal Fall menu, which includes a tasting menu of five courses for only $45. Mouthwatering options flood the seasonal fare lineup, including Roasted Beet and Butternut Squash Risotto with local Bucheron-style goat cheese, crushed pumpkin seeds and balsamic honey glaze; Seared Tilapia with Pumpkin Butter Glaze, pumpkin seed praline, bourbon molasses sauce, sauteed brussel sprouts and parsnip puree; and Country Gnocchi with roasted chicken, squash, roasted peppers, broccolini and sage.
