Renovations are currently underway at the Ice Line Skating Rink in West Chester. The rink isn’t experiencing the renovations though; it’s what surrounds the rink that’s getting people talking. Rob Staurowsky and his team are finishing up plans for The Goal Line Pub, the rink’s brand new restaurant and bar.
Before you join them for the grand opening on Friday, August 4, get to know the space and what Staurowsky has up his sleeve.
The pub, located on the 2nd floor mezzanine, is a full service bar and restaurant that will occupy up to 175 people. The space has a unique three-tiered floor that drops down about a foot on each level. It was designed this way so that every patron has full viewing access to the main rink overlooking the goal line (hence: The Goal Line Pub).
Opening alongside the restaurant is a banquet hall, perfect for sports team banquets, fundraisers and other events. Rob’s goal for the banquet hall is to cater not only to the guests at Ice Line, but to the public, as well.
The food here is certainly not an afterthought; the well-equipped kitchen actually doesn’t include a few things … like a freezer or a microwave. Rob says, “I think what really stands out to me, having a scratch-made kitchen, is the awareness and consciousness of the love and care for the food … the fact that I know what went into the food, as well as the customers. There is nothing better than getting satisfaction from food made with real ingredients.”
Those real ingredients are exactly what you see when you take a peek at The Goal Line Pub’s menu. Get excited about a wide range of tasty dishes, from housemade Bavarian pretzels and buffalo cauliflower in the shareables section to tilapia tacos, Thai shrimp salad and short rib penne. Rob draws inspiration from Francis Trzeciak, one of his very first chef mentors. “He taught me passion, integrity, to love and respect food and most importantly how to work extremely hard and creatively,” Rob says. “I owe a lot to Francis in how I run my daily procedures at work and life in general.”
And as far as future plans go, Rob says they plan to build planter boxes on their green roof to grow fresh veggies and herbs, as well as outsourcing as many local products that he can.
