Situated on South Howard Street in downtown York, Collusion Tap Works is an inviting brewery and taproom where York residents and visitors come to have a seat, grab a Collusion Tap Works beer and order snacks from an extensive menu of pub fare.
Collusion offers a dynamic list of housemade brews, ranging from weird and wonderful options (The Corn Has Spoken corn IPA) to creative takes on classics (Masquerade cappuccino porter) to sippable standbys (Auckland kölsch). The bar also features craft ciders from Big Hill Ciderworks, reds and whites from Allegro Wines and a couple of guest taps to support their fellow brewers.
We had the opportunity to gain some insight into the vast array of Collusion Tap Works offerings from owner and head brewer Jared Barnes.
PA Eats: When did Collusion Tap Works open its doors and what was the driving force behind starting the tasting room?
Jared Barnes: We opened September 2, 2016. I had worked for four other breweries in the past and decided it was finally time to open my own.
How many brews are offered on draft and how often do the taps rotate?
We offer 24 draft lines, with two to three new beers every single week. We are right around the 200 different beer mark since we opened less than a year ago.
What kinds of beers tend to dominate the taps?
IPAs and sours dominate our tap lines, with imperial stouts following closely behind.
Are your beers brewed onsite?
All of our beers offered are brewed onsite on our seven barrel brewhouse.
Who creates the food menu and which items tend to be the most popular?
We have our own kitchen with staff that design the menu, and our most popular dishes are the quesadillas, nachos and variations of grilled cheeses which we offer.
Does Collusion Tap Works offer events throughout the year?
We offer events every first Friday of the month and periodically throughout the year for holidays and special bottle releases.
What does the future hold for Collusion Tap Works? Any new event offerings planned or new brews in the works?
We have new beers every week, so that always changes. Our one year anniversary is Saturday, September 2. We also have a large Oktoberfest party on September 16. In addition, we are currently expanding our cold storage to allow for more production.
