Nourish PA: Three-Ingredient Fruit Bars

Sometimes a little snack is all we need to power through. These tasty fruit bars go the distance with the chewy, tart goodness of dried fruit and sweetness of condensed milk and an (optional) sugar dusting. Dried fruits also pack in the nutrients, antioxidants and fiber that keeps you feeling full for longer. These take just 10 minutes of preparation, so you’re not tied up for long. The recipe serves six, and could always be doubled for larger amounts or freezing for later.

If you do not have sweetened condensed milk, substitute the same amount of Evaporated milk plus 2 tablespoons granulated sugar. You can also substitute full-fat coconut milk or cream of coconut!

Ingredients

  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups dried fruit (like raisins, cranberries, apricots, or a mix)
  • Powdered sugar, for dusting (optional)

Method

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. Set aside.
  2. Combine sweetened condensed milk and flour in large bowl, stirring until a thick batter forms. Fold in dried fruit, ensuring it’s evenly distributed.
  3. Transfer batter to prepared baking dish in an even layer.
  4. Bake until edges are golden-brown and toothpick inserted into center comes out clean, about 25-30 minutes.
  5. Allow bars to cool completely in pan. Once cooled, transfer to cutting board and slice into desired bar shapes. Dust with powdered sugar (if using) and serve.
