Nourish PA: Sweet Onion Casserole

Sweet onions have a softer sweetness and juicier texture than most other onions, making them a great choice for recipes like this, where onions are the central ingredient. You don’t have to love onions to appreciate this buttery, cheesy side dish. Pair this with a simple protein like chicken, ham or steak or with some roasted vegetables for a filling meal.

Ingredients

  • 4 large sweet onions, thinly sliced
  • 4 tablespoons unsalted butter, divided
  • 1 cup reduced fat milk, or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups shredded cheddar, mozzarella or swiss cheese
  • 1 cup crushed butter crackers (like saltines, Ritz or club)
  • 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)

Method

  1. Preheat oven to 350°F. Lightly grease 9×9-inch baking dish with cooking spray.
  2. Melt 2 tablespoons of butter in large skillet over medium heat. Add onions, salt and pepper and cook until tender and light golden-brown, about 10-15 minutes. Transfer onions to prepared baking dish, spreading into an even layer.
  3. Pour milk or broth over onions and sprinkle evenly with cheddar cheese.
  4. Melt remaining butter in small bowl. Add crackers and stir to coat. Sprinkle cracker mixture evenly over cheese.
  5. Bake until golden-brown and edges are bubbling, about 25-30 minutes. Garnish with parsley and serve.
