Nourish PA: Blueberry and Walnut Parfait

For a spoonful of goodness with every bite, try this fresh fruit and yogurt parfait. Use thawed, nutrient-packed berries, gut-healthy vanilla (or plain) yogurt, flavorful walnuts with healthy fat and natural sweetener for this delightful treat that’s a great way to start your day.

Most of the ingredients are swappable, so use what you have available. You can substitute a handful of granola for chopped nuts, or as an additional topping.

Blueberry and Walnut Parfait

Ingredients

  • 2 cups yogurt (plain or vanilla)
  • 1 cup thawed frozen blueberries, or other frozen berries like strawberries, raspberries or mixed berries
  • 1/2 cup chopped walnuts or almonds
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon ground cinnamon (optional, for garnish)

Method

  1. Layer half of the yogurt, blueberries and nuts into serving glasses or bowls. Top with remaining ingredients.
  2. Drizzle with honey and sprinkle with cinnamon. Serve and enjoy.
