Portabello’s, the quaint Italian restaurant on State Street known for the lobster ravioli and excellent Italian cuisine, has new owners. Brett Hulbert and Sandra Morris are excited to be moving to Kennett Square and they look forward to settling in. Brett comes from the Golden Inn Resort in Avalon, where he was the Executive Chef. I caught up to them for a few moments as they were headed to the printers to work on the new menu.
So what changes are in store for Portabello’s?
“I don’t want to change the good things John has done,” Brett said, referring to the authentic Italian cuisine John Cantalicio was known for. “We are keeping the lobster ravioli on the menu. John’s sauce was fabulous, better than mine.”
Brett said they will continue offering the entrees that made Portabello’s a favorite, but he wants expand on the menu. “We’ll offer some American fare such as steak and fresh fish.” Brett plans on introducing “flying fish” specials, where he can choose the freshest fish available and have it that night. He will also roll out new specials over the next few weeks.
“I want to focus on seasonal recipes, Jumbo Scallops and Shrimp,” Brett said. “The menu will be ever-changing, real seasonal. We’re partnering with local stores such as Liz Marden for desserts and Mrs. Robinson for our teas.”
Eventually, Brett would like to offer cooking classes at the restaurant. He has held events at Williams Sonoma stores and has prepared food for book signings by chefs such as Bobby Flay. In addition to the fine cuisine, Portabello’s has gained recognition as a place Vice President Biden enjoys when visiting family that lives in the area.
