Philly’s Red Owl Tavern Debuts New Fall Cocktail Menu & New Lead Bartender

Red Owl Tavern, a Kimpton restaurant and the Historic District’s only contemporary full-service restaurant on Independence Mall, has launched its fall cocktail menu—the first for newly promoted Lead Bartender Paul Dellevigne, who now heads up the cocktail program at Red Owl’s expansive and popular bar.

Formerly “behind the stick” at popular Philadelphia venues such as Southwark and Rittenhouse Tavern, as well as the long-lived Tritone, Dellevigne released his first menu this week with a nod to autumn. The menu features improved classic cocktails that are delicious, distinctive and accessible all at once. For instance, Red Owl Tavern’s New Fangled is an improved, second-generation take on a classic Old Fashioned and uses Bols Genever, Vieux Carré Absinthe, Luxardo Maraschino, Demerara Syrup and Angostura Bitters.

The Tavern Negroni is one of Dellevigne’s favorites and blends Hendrick’s Gin, Dolin Sweet Vermouth, Aperol and Regan’s Orange Bitters. “I used Aperol instead of Campari to add a little more citrus and brightness to a drink I already love,” he says.

Conversely, the Sin Cyn is also “Negroni-esque,” Dellevigne says, but more bitter. “I used Cynar—an Italian bitter from artichokes that’s really remarkable and also used Scotch instead of gin. It’s really a distinctive cocktail.” Red Owl Tavern’s Philly 50 mixes Bluecoat Gin, Dolin Dry Vermouth and Bartram’s Bitters and is a take on precursor to a classic gin martini. “Vermouth got a bad rap because most bars did not properly care for it and it spoils easily. But when you have a top-notch vermouth just opened, it’s a different animal,” he says.There are nine Red Owl Tavern signature cocktails in addition to a full bar and a new local Brewer of the Month program (September’s is Downingtown, PA’s Victory Brewing Co.) along with three sophisticated and alcohol-free cocktails in the “Temperance” section. These virgin drinks include Them Apples, which uses fresh apple juice shaken with spiced berry pepper syrup and mint and L & T, a soothing sparkling drink of lavender syrup, lime juice and tonic water.“The most important part of being a bartender is the human interaction,” Dellevigne says. “You find out what your guests’ tastes are instead of pushing a drink you think they should have.”Take a look at the whole menu, and tell us what you think:
