Kim Strengari and Marianne Gere, owners of Stella Blu, Gypsy Saloon, Southern Cross Kitchen and ConshyGirls Catering and Events, have announced that they are opening their fourth restaurant—Gypsy Blu—with partner Clark Gilbert.
Gilbert will be the head chef and equal partner in the restaurant, which will be located in the former 34 East location at 34 E. Butler Avenue in Ambler. According to Gilbert, the restaurant will serve “approachable Italian” dishes. It will also feature approximately 50 seats outside as well as a spacious interior dining area.
While there is no confirmed opening date, a targeted timeframe of May/early June has been set.
Gilbert is a seasoned chef, having worked since 1993 at various locations, including Bisou, Gemelli and Isabella. The chef has been friends with Strengari and Gere for years and says that he has “always admired their strong focus on hospitality.”
