While chatting it up with pastry chef Matt McIsaac, I had a resounding feeling of the pride he puts into this passion. He personally strives to see that every individual pie that leaves his kitchen is perfection. “I’m very particular about these pies,” he emphasized. “I’m responsible for every bite that our customers enjoy.”
“It really is all about the crust,” he added. “Flakey is the only way to go. Using eggs in our process creates the natural leveling and binding properties to give the crust its lightness.” It’s also critical in preventing crumbling. Using a high butterfat-to-flour ratio is also key in creating these works of art.
Never one to put soggy pies in the oven, Matt believes in removing as much juice as possible from the apple version. Having the pies slightly chilled before baking keeps them from “melting.”
Chef Matt recommends using a sharp serrated knife while slicing to create that photo-perfect piece. Additionally, he suggests accentuating the apple pie with a small spoonful of vanilla bean ice cream and a cinnamon stick. A dollop of fresh whipped cream works simply on the pumpkin pie, and a drizzle of warm chocolate sauce over the pecan selection will make your holiday one to remember.
