PA Eats recently announced that MAIN & VINE would be hitting Villanova in the very near future. Now, we’ve learned even more about this new eatery, including who will be heading up the kitchen!
Chef Charles Vogt is prepared to take the helm at MAIN & VINE when the bistro opens its doors, hopefully in mid-March. The new executive chef is a graduate of the Academy of Culinary Arts in Mays Landing, NJ. Chef Vogt has honed his skills working under esteemed Iron Chef Geoffrey Zakarian at the Water Club at Borgata in Atlantic City, in addition to having a long run at Robert Wiedmaier’s Mussel Bar & Grille and Brasserie Beck, both in AC and in the Washington, DC area.
Chef Vogt has taken the reins of the kitchen and has begun hiring his opening team. He’s currently in the process of developing the menu for MAIN & VINE, which takes a fresh-from-the-vine approach, utilizing natural ingredients in a casual culinary format. As for the cuisine type, look for touches of French, Italian, Latin, Asian, and American influences. The MAIN & VINE team is also in the process of developing their own sourdough, which will be used for their signature pizzas.
“It has been great working with Charles on the development of our menu. His fresh approach to cooking and his elevated execution are exactly what we wanted in our chef,” explains Jay Stevens, managing partner. “He shows the same attention to detail that I have come to love from the great chefs that he has worked with in the past.”
