Ingredients
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped bell peppers, any color
- 2 tablespoons chopped tomatoes, or canned diced tomatoes, drained
- 2 tablespoons chopped cabbage, optional
- 1 tablespoon chopped onion
- 2 tablespoons shredded cheddar cheese, or mozzarella
Method
- Coat a microwave-safe mug with cooking spray.
- Crack eggs into greased mug. Add salt and pepper and whisk until smooth.
- Add peppers, tomatoes, cabbage and onions and stir to combine.
- Microwave on high for 1-2 minutes, or until egg is set. Sprinkle with cheese and cook for an additional 30 seconds.
- Allow mug to cool slightly before serving.
