This simple lime dressing mixture can be substituted with your favorite vinaigrette dressing. If you don’t have (or don’t like) couscous, sub in quinoa, lentils, rice or another grain in its place.

Ingredients
- 2 tablespoons olive oil
- 1 tablespoon lime juice, grapefruit juice or lemon juice
- 1 teaspoon honey, or maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked couscous, cooled
- 2 cups baby spinach, or arugula
- 1 grapefruit, peeled and segmented, or other citrus like oranges, mandarins or clementines
- 1 avocado, peeled, pitted and sliced
- 1/4 cup crumbled feta cheese, or other crumbly cheese like parmesan, cotija or goat cheese (optional)
Method
- Whisk olive oil, lime juice, honey, salt and pepper together in a small bowl until combined.
- Combine couscous, spinach, grapefruit and avocado slices in a large serving bowl. Drizzle with dressing and gently toss to coat.
- Sprinkle with feta cheese, if using, and serve.
