Ingredients
- 2 cups tortilla chips
- 1/2 cup canned chicken, drained
- 1/2 cup black beans, drained and rinsed, or 2 cups cooked black beans, drained
- 1/2 cup canned corn, drained, or 1/2 cup frozen corn kernels, thawed and drained
- 1/2 cup shredded cheese (like cheddar or a Mexican-style blend)
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley (optional, for garnish)
- 1 lime, juiced, or 1 tablespoon lime juice (optional, for garnish)
Method
- Arrange half of the tortilla chips in a single layer on a microwave-safe plate.
- Top with half of the chicken, beans, corn and cheese. Repeat layers with remaining ingredients.
