Ingredients
- 1 (15 ounce) can chickpeas, drained and rinsed, or 2 cups cooked chickpeas, patted dry
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup mini pretzels (optional)
- 1 cup mixed nuts, such as almonds, cashews or peanuts
Method
- Pat chickpeas dry with paper towels.
- Combine olive oil, cumin, garlic powder, chili powder, salt and pepper in a small bowl.
- Add chickpeas, pretzels and nuts to olive oil mixture and toss to coat.
- Working in batches, spread mixture out in a single layer onto a microwave-safe plate or dish.
- Microwave stirring occasionally, until chickpeas are lightly golden-brown and crisp, about 5 minutes.
- Allow snack mix to cool slightly before transferring to a serving bowl. Serve and enjoy!
