This recipe utilizes common pantry staple items like graham crackers, sugar, cream cheese, Greek yogurt and fresh or frozen blueberries. Press the crust and fill with the creamy blueberry filling before zapping in the microwave until firm. Then, let it chill, top with more blueberries and enjoy.

Ingredients
- 1/2 cup graham cracker crumbs, about 3 crackers
- 2 tablespoons unsalted butter, melted
- 1/4 cup plus 1 tablespoon granulated sugar, divided
- 1/4 teaspoon salt
- 1/2 cup plain Greek yogurt
- 4-ounces cream cheese, softened
- 1/2 teaspoon pure vanilla extract
- 1/2 cup fresh or frozen blueberries, plus more for garnish
Method
- Combine graham cracker crumbs, melted butter, 1 tablespoon of sugar and salt in small microwave safe bowl. Press mixture firmly into bottom of bowl to form crust.
- Whisk together yogurt, cream cheese, remaining sugar and vanilla extract until smooth. Gently fold in blueberries and pour over crust in an even layer.
- Microwave on high for 1 minute then in 15 second increments until cheesecake is firm in center.
- Let cheesecake cool slightly. Transfer to refrigerator to chill completely, about 30 minutes. Once chilled, top with additional blueberries and serve.
