Ingredients
- 2 tablespoons olive oil
- 2 medium potatoes, peeled and diced into 1/2-inch cubes
- 1 medium beet, peeled and diced into 1/2-inch cubes
- 1 cup shredded cabbage
- 1 small onion, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Method
- Heat olive oil in a large skillet over medium heat.
- Add potatoes and beets and cook, stirring occasionally, until they begin to soften and brown, about 10-12 minutes.
- Add onions, cabbage, garlic, salt and pepper and cook until onions are tender and beginning to caramelize and are light golden-brown another 5-6 minutes. Serve warm.
