Fluffy, creamy, comforting: Mashed potatoes are a beloved side dish for many good reasons! To get a bit more flavor and nutrition in the mix, we’ve added split peas (So much fiber! So much protein!) and umami-rich cream of mushroom soup for a delicious mash that comes together in just 40 minutes.

Ingredients
- 2 large russet, gold or white potatoes, peeled and cut into 1-inch cubes, about 1 pound
- 3 (15-ounce) cans split peas, rinsed and drained, or 3 cups cooked split peas
- 1 (10.5-ounce) can cream of mushroom soup
- 3 tablespoons unsalted or salted butter, melted, plus more for serving
- 1 teaspoon garlic powder or onion powder
- 1/2 teaspoon each salt and pepper
- 2 teaspoons chopped fresh parsley, or 1 teaspoon dried parsley (optional)
Method
- Place potatoes in a large pot and cover with water by 1-inch. Bring to a boil over high heat. Reduce heat to medium and simmer until potatoes are fork tender, about 20-25 minutes, drain and return to pot. Add in split peas, cream of mushroom soup, butter, garlic powder, salt and pepper.
- Use a fork to hand-mash potatoes and peas together until desired consistency is reached.
- Transfer potato and pea mash to a serving dish and top with additional butter. Garnish with parsley (if using) and serve.
