Ingredients
- 4 large sweet onions, thinly sliced
- 4 tablespoons unsalted butter, divided
- 1 cup reduced fat milk, or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 cups shredded cheddar, mozzarella or swiss cheese
- 1 cup crushed butter crackers (like saltines, Ritz or club)
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)
Method
- Preheat oven to 350°F. Lightly grease 9×9-inch baking dish with cooking spray.
- Melt 2 tablespoons of butter in large skillet over medium heat. Add onions, salt and pepper and cook until tender and light golden-brown, about 10-15 minutes. Transfer onions to prepared baking dish, spreading into an even layer.
- Pour milk or broth over onions and sprinkle evenly with cheddar cheese.
- Melt remaining butter in small bowl. Add crackers and stir to coat. Sprinkle cracker mixture evenly over cheese.
- Bake until golden-brown and edges are bubbling, about 25-30 minutes. Garnish with parsley and serve.
