Nourish PA: Tuna Mac Casserole

Casseroles bring together convenience and comfort in a classic dish that’s hard to resist. With most casserole recipes, including this one, there’s plenty of wiggle room for swapping ingredients or throwing something new into the mix. The components alchemize into a creamy, savory and bubbling entree to scoop out and enjoy.

With this tuna mac casserole, combine boxed and canned ingredients for a tender, protein-packed base that’s topped with crunchy bread crumbs. The cheesy macaroni contrasts perfectly with salty tuna and vegetal greens.

You can substitute crushed butter crackers for bread crumbs or top the casserole with additional shredded cheese.

Ingredients

  • 1 (7.25 ounce) box macaroni and cheese, prepared according to package directions
  • 1 (5 ounce) can tuna, drained
  • 1 (10.5 ounce) can creamed soup (like mushroom, celery or chicken)
  • 1/2 cup bread crumbs (like Italian-style or plain)
  • 1 (15 ounce) can peas, drained (or other canned vegetables, like green beans or mixed vegetable medley) (optional)
  • Chopped fresh parsley, or 1 teaspoon dried parsley (optional, for garnish)

Method

  1. Preheat the oven to 375°F. Combine the prepared macaroni and cheese, tuna, soup and vegetables in a large bowl.
  2. Transfer the tuna mixture into a lightly greased small oven-safe baking dish, making sure it’s in an even layer.
  3. Bake until the edges are bubbling and the casserole is heated through, about 15-20 minutes.
  4. Sprinkle with bread crumbs and bake for an additional 5 minutes or until golden-brown.
  5. Garnish with parsley and serve.
