We love how many home cooks are using social distancing as an opportunity to try big kitchen projects and ambitious recipes! A friend of PA Eats, Berry Woodrow, is using her quarantine time to tackle some new techniques and dishes, including homemade potato gnocchi. Blending recipes from The Joy of Cooking and Bon Appetit, Berry and her fiance, RJ, walk us through the process of mixing, shaping, rolling, boiling and saucing gnocchi, from their home kitchen in Philadelphia. The result: fluffy little pasta pillows with a garlic, sage, asparagus and shelled pea sauce — a success!
Berry loves cooking and has made several little Instagram cooking shows, much like this one, to share with friends and family. In this case, she said she chose gnocchi because, “I’ve been wanting to teach myself how to make my own pasta! I purchased a ricer from Amazon last week knowing we were going to be stuck inside for a while and I need to be constantly entertained!”
After making homemade gnocchi, Berry has a few tips to share:
- Make sure everything is mise en place, especially when trying a new recipe, so you’re not trying to rush to grab a random tool/ingredient.
- Specifically for the gnocchi, make sure the potato/flour mixture has cooled a little bit before adding the beaten egg so it doesn’t scramble.
- This would be a great activity for parents to try with their kids.
