If you’ve made the same hummus recipe a million times, you’re due for a new dip! This savory creamy dip starts with a base of well-seasoned roasted PA butternut squash, which is blended with two kinds of delicious dairy: local chevre and cream cheese. The creamy richness of the cheeses add a wondrous texture to the pureed squash and help to balance its earthy sweetness.
This great idea comes to us from the Pennsylvania Farm Show‘s series called Pennsylvania Pairings, which matches up dishes and drinks with a focus, of course, on local sourcing. The recommended pairing for this butternut squash dip is PA chardonnay. Whether you prefer buttery oak-kissed chard aged in newer barrels, or a fruity, crisp type (usually aged in stainless steel), chardonnay’s typical tasting notes of green/yellow apple and tropical fruits are a wonderful pairing with the dip. A few suggestions to try are Grandview Vineyard’s 2018 Chardonnay, Pennswood Winery’s 2021 Chardonnay Reserve and Presque Isle Wine Cellar’s 2018 Chardonnay.
