Pasta was the name of the game when Lancaster-based Chef Ian Newman came to spend the day in the Pennsylvania Kitchen. Newman is something of a pasta whisperer — while in the studio, he taught us how to make fresh pasta dough for an elegant spring raviolo dish, as well as for a mind-blowingly good cacio e pepe. His cheffy toolkit included high-end ingredients (caviar! pea shoots!), but his demeanor was down-to-earth and easygoing.
